Energy Balls
A wholefood snack rich in fibre, healthy fats, and antioxidants, perfect for that afternoon slump, mum-life fuel, or a lunchbox treat.
Ingredients:
1 cup dates (pitted & soft)
1 tbsp coconut oil
2 tbsp cacao powder
1 tbsp chia seeds
1 tbsp maple syrup or honey
½ tsp cinnamon
¼ cup almond meal
Shredded coconut (to roll)
Method:
Blend all ingredients in a food processor until sticky and combined
Roll into small balls
Coat in coconut and pop in the fridge to set
