Loaded Taco Nourish Bowl
A simple, balanced dinner that's packed with protein, fibre and flavour.
If you're anything like me, you want meals that are quick to prepare, nourish your body, and actually taste good. This Loaded Taco Nourish Bowl ticks all the boxes. It's one of those meals the whole family can enjoy, while also providing your body with the nutrients it needs to support energy, gut health and overall wellbeing.
One thing I encourage my clients to focus on is building balanced meals rather than following restrictive diets. A simple way to do this is to include:

Ingredients
Serves 4
Taco Beef
500g lean beef mince
1 packet Mingle Taco Seasoning
1 red capsicum, diced
1 yellow capsicum, diced
Sweet Potato
2 medium sweet potatoes, diced
1 tbsp olive oil
1 tsp dried rosemary
Salt and pepper
Toppings
1 cup grated cheese
1 avocado, mashed or sliced
1 cup cottage cheese
Method
Step 1
Preheat your oven or air fryer to 200°C.
Step 2
Toss the diced sweet potato with olive oil, rosemary, salt and pepper.
Cook until golden:
Air fryer: 18–20 minutes
Oven: 30–35 minutes
Step 3
While the sweet potato cooks, heat a large frying pan over medium-high heat.
Brown the beef mince before adding the Mingle Taco Seasoning according to the packet directions.
Step 4
Add the diced capsicum and cook for another 4–5 minutes until slightly softened.
Step 5
Divide the roasted sweet potato between bowls, top with the taco beef, then finish with grated cheese, cottage cheese and avocado.
Enjoy while warm.
