Immune-Boosting Slow Cooker Chicken Soup

When life gets busy (especially with little ones), nourishing your body shouldn’t mean spending hours in the kitchen. This immune-boosting soup is my go-to for midweek meals. It's simple, satisfying, and packed with nutrient-dense ingredients to support immune function, digestion, and recovery.
Think: slow-cooked chicken, fibre-rich veggies, warming spices, and gut-loving broth, all in one pot. Oh and did I mention noodles?
Perfect for postpartum mums, kids with sniffles, or anyone needing a little TLC in a bowl.
Ingredients:
3 chicken thighs or 2 chicken breasts
1 zucchini (diced)
1 carrot (diced)
1 bunch bok choy
1 cup chicken stock (preferably reduced salt)
1 tbsp bone broth concentrate (optional but great for gut health)
2 tsp curry powder
1 cup water
Juice of 1 lemon
½ cup mixed dried soup beans (or canned if short on time)
1 packet rice vermicelli noodles
Salt & pepper to taste
Optional: Add onion and garlic for extra immune support and flavour.
Method:
Add the chicken, carrot, zucchini, stock, bone broth (if using), curry powder, lemon juice, water, beans, and a generous pinch of salt and pepper to your slow cooker.
Cook on HIGH for 3 hours, then switch to LOW for 2 more hours.
Once the chicken is tender, shred it using two forks and return it to the soup.
Cook the rice vermicelli noodles separately according to packet instructions, then stir them through the soup.
Add bok choy on top for the last few minutes to gently steam before serving.
